Seaweed is a versatile vegetable

Seaweed is a versatile vegetable that not only enhances a variety of dishes but also is good for you and the planet.

Seaweed, this leafy sea vegetable is a regenerative food source that can be farmed without requiring fresh water, fertilizer or land. Seaweeed is sourced carefully from uncontaminated coastal areas by hand with scissors or a knife. This ensures the seaweed will regrow and continue to nourish marine life.

Seaweed has health benefits and culinary versatility. Depending on the type and species, seaweed’s nutritional profile can vary quite a bit.

In general, it contains minerals (iodine, iron, zinc, sodium, calcium, magnesium and copper) as well as vitamins A,C, E, K, folate and B12. Seaweed is low in calories and a good source of plant protein, omega 3 fats and dietary fiber, which benefits gut health and can help with maintaining a healthy body weight. Seaweed’s complex flavor profile is unique in that it contains the amino acid glutamate, which creates umami or a savory flavor in dishes. Source: Vicki Shanta Retelny
